At Wickedfood cooking school we find Fergus Henderson’s approach to cooking whacky, wonderful and deliciously different. He plunges you into his imaginative, energetic kitchen where you keep boiled hams up your sleeves, and squish the tomatoes in your hands, giving your dish a slight blush. Nose to Tail Eating (Pan MacMillan) is a truly British cookbook, in which Henderson tackles the whole beast, with seldom-tried dishes from Pigs’ Trotters stuffed with Potato to Roast Bone Marrow, from Gratin of Tripe to Haggis, Lambs’ Tongues, Turnips and Bacon, and Stuffed Lambs’ Hearts, as well as many other simple traditional and non-carnivore favourites.

Henderson’s methods are precise and humorous and his wholehearted enthusiasm in writing about food infuses the reader with delight. His recipes are not about replicating restaurant plates of food, but about plunging into communal cooking and eating at home with friends – as his unusual photographs depict – defenatly dishes to try in a future cooking class.

Cooking for Friends by Gordon Ramsey

Most TV viewers know Gordon Ramsey as part high octane super professional and part kitchen bully-boy. Love him or hate him, he certainly knows his food.  In Cooking for Friends, his latest book, we see a very different side of him, more relaxed cooking for family and friends, using seasonal fresh ingredients at their peak and doing as little as possible to them to create a scrumptious meal. The book is full of Gordon’s best-loved versions of classic British dishes, and contains more than 100 of his favourite recipes. At Wickedfood Cooking School we will be incorporating some of these recipes for our cookbook-of-the-month cooking class, when we will be reinterpreting them with lots of additional tips for our students.

Jamie Oliver manages to bring out a cookbook of fresh ideas every year. Jamie’s Ministry of Food is certainly one of his best – a book that should be given to every person leaving home, it has everything there and what’s more it is written in a funky new style that makes it exciting and refreshing. Even people who don’t usually like cooking will find it inspiring. – definitely our book of the year for 2009.

At Wickedfood cooking school in Gauteng, we consider this book his best. Each month we take six recipes from the book and re-interpret them, with plenty of tips along the way. In May our aspiring hobby cooks will learn the secrets to successful easy cooking, with class theme being quick meals and pastas (click here for more information on the class). Dishes covered during the class will include spicy Moroccan stewed fish with couscous, chicken and leek stroganoff, broccoli and pesto tagliatelle, classic tomato spaghetti, macaroni cauliflower cheese bake and banana tarte tatin, with a wicked twist.

Kylie Kwong: Recipes and Stories

Kylie Kwong: Recipes and Stories is a delightful book of simple recipes, similar in approach to her television series. The book covers a wide variety of Chinese-inspired recipes, and stories from the author’s childhood which gives the book a great personal touch. With her easy charm and good looks, it is little wonder that second generation Chinese Australian Kylie has become a household television celebrity chef. Her food is deliciously uncomplicated.

In June Wickedfood cooking school Johannesburg will be running their cookbook-of-the-month class based on this book. Dishes that will be covered in this class will include crispy skin chicken, stir-fried beef, spicy dry-fried green beans, deep-fried silken tofu, stir-fried rice noodles and steamed egg and ginger custards.
