Brazilian cooking class, showcasing the country&#8217;s unique flavours including savoury pumpkin soup, Feijoada<strong>, </strong>fried Brazilian-style greens, rice cooked with onion, toasted manioc flour and an orange flan.</span></li>
<li><span style="color: #000000;"><strong>Sunday 27June </strong>at<strong> 4pm</strong> –</span> <strong><span style="color: #ff0000;">Classic Japanese dishes</span></strong> <span style="color: #000000;">(R380pp). Classic Japanese cooking class with dishes from the Japanese kitchen including yakitori grilled chicken, tofu and vegetable soup, poached fish with miso, chicken cakes, spinach rolls with bonito flakes and caramelised sweet potatoes.</span></li>
<li><span style="color: #000000;"><strong>Monday 28 June </strong>at<strong> 6pm –</strong></span> <strong><span style="color: #ff0000;">Classic French cooking</span> </strong><span style="color: #000000;">(R370pp). French cooking class, an introduction to French cuisine including cheese soufflé, potato and leek soup, coq au vin, potato gratin, and tarte tatin.</span></li>
<li><span style="color: #000000;"><strong>Monday 05 July </strong>at<strong> 6pm</strong> –<strong> </strong></span><a href="http://www.wickedfood.co.za/blog/cooked-in-africa-justin-bonello.html" target="_blank"><strong><span style="color: #ff0000;">Cooked in Africa</span></strong></a> (R380pp). <a href="http://www.wickedfood.co.za/blog/cooked-in-africa-justin-bonello.html" target="_blank"><strong>Justin Bonello</strong></a> <span style="color: #000000;">has become a cult hero in the South African culinary world. Through his quirky television series, and accompanying book, Cooked In Africa, he has taken a bunch of friends on a culinary road trip through southern Africa.  We’ve taken a few of the recipes from the series and re-interpreted them to create a delicious South African cooking class.</span></li>

Each entry includes a brief history, detailed description, and authoritative information on propagation, as well as helpful advice about harvesting times and methods, cultivation, pruning, pests and diseases.<br />

<p><span style="color: #000000;">By the time you read the next newsletter,  the world cup will have started.  To get you into the spirit of things, over the next two months, Wickedfood Cooking School will be running some cooking classes for individuals based around menus from those countries participating in the World Cup that we feel have the most interesting culinary traditions.  we start with the delicious South African cooking class, followed by Brazil, and Japan over the next three weeks. </span></p>

<div>1.    Buy local when you can. It means less fuel was used to transport your food, and less carbon dioxide in the atmosphere.<br />
2.    Shop at farmers&#8217; markets. You know you&#8217;re buying locally, and contributing to the local economy as well. Keeping local farmers in business is good for everyone.<br />
3.    Skip &#8220;serving size packs&#8221; of food and buy in bulk. It reduces the amount of trash going into the landfills.<br />
4.    Bring your own bags. Every plastic bag you don&#8217;t use is one less bag in the trash. Remember you are charged between 28 and 40 cents for every plastic bag.<br />
5.    Look for the recycle symbol on products so as to make sure you&#8217;re buying containers that can be recycled.</div>

<p style="text-align: left;"><strong>Gordon:</strong> &#8220;Butter chicken, or murgh makhani, was one of the first dishes I tasted when I went to India. Its origins can be traced back to Mogul times, but the dish and its history is most closely associated with Delhi&#8217;s famous Moti Mahal restaurant, where I had the pleasure of eating this fantastic dish. Over time, numerous chefs have attempted to emulate the rich buttery sauce, and flavours vary slightly between restaurants. This is my version of the classic dish.&#8221;</p>

<h3>Ingredients</h3>
</div>
<div style="text-align: left;"><em><strong>800g boneless and skinless chicken thighs, cut into 3-4cm pieces</strong></em><br />
<em><strong>2 garlic cloves, peeled and finely crushed</strong></em><br />
<em><strong>2cm ginger, peeled and finely grated</strong></em><br />
<em><strong>½t  fine sea salt</strong></em><br />
<em><strong>½t  hot chilli powder</strong></em><br />
<em><strong>1½T  lemon juice</strong></em><br />
<em><strong>75ml natural yoghurt</strong></em><br />
<em><strong>½t  garam masala</strong></em><br />
<em><strong>½t  ground turmeric</strong></em><br />
<em><strong>1t  ground cumin</strong></em><br />
<em><strong>1-2T  vegetable oil, for brushing</strong></em></div>
<h3 style="text-align: left;">For the sauce:</h3>
<p style="text-align: left;"><em><strong>1½T  ghee or melted unsalted butter<br />
2 garlic cloves, peeled and finely chopped<br />
2cm ginger, peeled and finely chopped<br />
1 cardamom pod, seeds lightly crushed<br />
2 cloves<br />
1t  ground coriander<br />
1t  garam masala<br />
1t  ground turmeric<br />
1t  hot chilli powder, or to taste<br />
275ml tomato puree<br />
1T  lemon juice<br />
40g unsalted butter<br />
100ml double cream<br />
1T  chopped coriander, to garnish</strong></em></p>
<ol style="text-align: left;">
<li>Place the chicken in a bowl with the garlic, ginger, salt, chilli powder and lemon juice. Mix, cover with cling film and chill for 30 minutes. Mix together the yoghurt, garam masala, turmeric and cumin and add to the chicken, making sure that each piece is well coated with the mixture. Cover again and chill for 3-4 hours.</li>
<li>Preheat the oven to 180°C. Put the marinated chicken pieces on a grill rack set on a baking tray and bake for 8-10 minutes. Brush the chicken pieces with a little oil and turn them over. Bake for another 10-12 minutes until just cooked through (or grill over very hot coals on the braai &#8211; ±5 minutes on each side).</li>
</ol>
<h3 style="text-align: left;">For the sauce:</h3>
<ol style="text-align: left;">
<li>Heat the ghee or butter in a pan and add the garlic and ginger.</li>
<li>Fry for a minute or so then add the cardamom, cloves, coriander, garam masala, turmeric and chilli powder. Stir well and fry for 1-2 minutes until they give off a lovely aroma.</li>
<li>Stir in the tomato puree and lemon juice and cook for another couple of minutes.</li>
<li>Add the cooked chicken pieces to the sauce and stir well to coat. Finally, add the butter and cream and stir continuously until the butter has melted and the sauce is smooth. Taste and adjust the seasoning. Transfer to a warm bowl and serve hot, garnished with chopped coriander.</li>
</ol>

She&#8217;s extremely knowledgeable on all aspects of vegetable gardening, being the  founder of <a href="../Soil%20for%20Life" target="_blank"><span style="color: #008000;"><strong>Soil for Life</strong></span></a>.  The book takes you on a journey into the field of organic food, a hands-on, no frills guide for the South African organic food gardener with expounding pencil drawings and stunning photographs.</p>
<p style="text-align: left;">The book starts off explaining the principle of organic gardening before moving on to practical aspects of preparing the soil , building flour beds, planting and pest control.  In addition there is a very interesting chapter on earthworms as well as gardening in containers for smaller areas.</p>

1t salt<br />
2 eggs<br />
1 cup milk<br />
1⁄2 cup beef drippings or oil<br />

<ol>
<li>Preheat the oven to 240°C.</li>
<li>Season beef with salt and pepper.</li>
<li>Heat the oil in a roasting pan into which the meat will comfortably fit. Brown the meat on all sides, and set aside.</li>
<li>Add the onions and garlic, and fry until they just start to change colour.  Add the red wine and deglaze the pan.  Place the meat on top of onions, fat side up and place in the preheated oven.  Roast for 10 minutes, and then reduce the heat 170°C, and roast for a further 40 minutes.</li>
<li>Remove from the oven, transfer the meat to a cutting board, and allow to rest, covered with foil, while you make the Yorkshire pudding and gravy. Skim the fat off the cooking juices  into a bowl.</li>
</ol>
<h3>Yorkshire pudding</h3>
<ol>
<li>Increase oven temperature to 240°C.</li>
<li>Sift flour together with salt into a medium bowl. Make a well in center and add eggs. Whisk in milk. Mix until smooth. Set aside at room temperature for 1 hour.</li>
<li>Spoon 1⁄2t of fat into each cup of a nonstick muffin pan. Heat in oven for 15 minutes.</li>
<li>Remove pan from oven, divide the batter evenly between cup and bake until risen and brown, about 20 minutes.  Remove from oven and set aside.</li>
</ol>
<h3>Gravy</h3>
<ol>
<li>Strain the cooking juices into a clean saucepan. Cook, whisking, until thick, about 5 minutes. Remove from heat and whisk in the butter.  Serve immediately</li>

<p style="text-align: left;"><a href="http://www.wickedfoodteambuilding.co.za/teambuilding.html" target="_blank"><span style="color: #008000;"><strong>Wickedfood Cooking School</strong></span></a> <span style="color: #000000;">has identified the 10 participating soccer teams with the most interesting cuisine and drawn up a representative 6-dish menu for each national <span style="color: #000000;">t</span></span><span style="color: #000000;">eam</span>.<span style="color: #000000;"> The class is divided into two groups, each representing one of these national teams, and cooks the relevant menu. We supply the ingredients and recipes for each team. Apart from the fun aspect, this is also a novel way of entertaining clients, a great form of teambuilding, or ideal opportunity of assessing various staff members&#8217; abilities to work together and solve common problems. Once all the dishes are cooked, our judging panel, will choose the      winning team and then the participants sit down and enjoy the 2 respective meals      they have prepared.</span></p>

<p style="text-align: left;"><span style="color: #000000;">Our first classes were run from restaurant premises in Illovo in October 2001. In May 2002, the school was moved to a purpose-built kitchen in Fourways. Our newest school opened in Sunninghill in August 2007. The school can accommodate up to 60, in hands-on classes in state-of-the-art, purpose-built, teaching kitchens and offer over 30 classes (including special <a href="../../school_group_classes_program_halaal.html">halaal</a> options) specifically for the corporate and group market.</span></p>
