Cocoa butter is the natural fat extracted from the cacao bean. Also known as oil of the obroma, cocoa butter is slightly yellowish in color, and while it is extracted from chocolate, it has a bland taste and only a faint chocolate smell. It is edible and is used in making white chocolate and certain confections, but has many uses beyond the kitchen.The most desirable quality of cocoa butter is its stability as a fat containing natural antioxidants that also preserve it well. Cocoa butter has a melting point just below average body temperature, which is what causes chocolate to remain solid at room temperature, but melt in the mouth. It gives a smooth texture to many confections containing chocolate and is often used by culinary experts in a baking capacity.

Cocoa butter is also used in cosmetic and pharmaceutical products. In the pharmaceutical industry, cocoa butter is used in the making of suppositories and oral medications in capsule form. It has the ability to retain a molded shape while containing commonly used medicinal chemicals without unstable reactions. The use of cocoa butter as an inactive ingredient in capsules and suppositories is equally desirable because it is safe.

Cocoa butter is often found as an additive to cosmetics, shampoos and soaps, but it is also a natural emollient making it ideal for lotions and lip balms. The moisturizing abilities of cocoa butter are frequently recommended for prevention of stretch marks in pregnant women, treatment of chapped skin and lips, and as a daily moisturizer to prevent dry, itchy skin. The fact that is a natural preservative and has a faintly pleasant aroma further lends benefits to its cosmetic uses.

Though many believe that cocoa butter has the ability to reduce or diminish the appearance of scars, this is a theory that is yet unproven. It does however, promote elasticity in the skin and will aid in the healing of chapped skin if it is used regularly. Cocoa butter is often mistakenly used by people to expedite a suntan and while it will enhance a natural tan, it does not have a sun protection factor (SPF).

This book is one of the best seafood books i have read in the past couple of months with its sharp, clear and colourful pictures,  Greg Doyle and Grant King take the freshest seafood and turn it in a work of art while keeping in simple and letting the freshness of the ingredients speak for themselves, from the Thai-influenced sashimi of kingfish to Blow-torched prawns. This book has a wide variety of interesting canapes, mains and desserts to keep the seafood lovers busy for months with great tasting recipes that with practice well have your food looking like it has come out of a three star Michelin kitchen.

Class highlights for the next two weeks include:

  • Monday 27 July at 6pmEasy to prepare Italian cooking class (R360pp). An introduction to Italian cuisine including tomato pizza, bean and pasta soup, cannelloni, grilled fish, bean salad and lemon tart.
  • Sunday 02 August at 4pmSouth African cooking class - A Taste of the Karoo (R370pp). Unique flavours that have become synonymous with South African farm cuisine including chicken pie, bobotie, pumpkin fritters, mealie bread and koeksisters.
  • Monday 03 August at 6pm Making pasta, basic shapes and sauces (R360pp). How to make pasta, farfalle with chicken and cherry tomatoes, salad Florentine, gorgonzola cream sauce, cheese and tomato filled cannelloni, and delicious sweet noodle cake.
  • Sunday 09 August at 4pm – Turkish cooking classmeza (R350pp). Finger food for easy alfresco dining including chicken and walnut dip, cheese pastries, baby marrow fritters, beetroot salad with yoghurt, grilled meat kebabs, pide breads and kadayif.

Cookbook of the week

Najmieh Batmanglij has spent a lifetime introducing people to the pleasures of Persian cuisine.   Her book,  New Food of Life: Ancient Persian and Modern Iranian Cooking and Ceremonies has been referred to as  “The definitive book of Persian cooking” by the Los Angeles Times. She has spent the past 26 years traveling, teaching Persian cooking classes, and adapting authentic Persian recipes to tastes and techniques in the West. In her book 240 classical and regional Iranian recipes, supported by 120 colour photographs, are intertwined with descriptions of ancient and modern ceremonies, poetry, folk tales, travelogue excerpts, and anecdotes. Our favourite ingredientTomatoes

There are some 7500 tomato varieties grown for various purposes. They are divided into several categories based on the shape and size of the tomato with some of the more commonly know being beef, plum, cherry, roma etc…with several different colours from bright red to yellow, orange, pink, black, brown, ivory, white, and purple.  Botanically, a tomato is the ovary, together with its seeds, of a flowering plant: therefore it is a fruit. However, the tomato is not as sweet as those foodstuffs usually called fruits and, from a culinary standpoint, it is typically served as part of a salad or main course of a meal, as are vegetables, rather than at dessert in the case of most fruits.

Food tip of the week: – When you bake cookies and they come out too hard, simply put the cookies in a bag with a piece of bread overnight . The cookies will absorb the moisture out of the bread and will be soft in the morning!

Beef Short Rib

2T butter
2T oil
1kg short ribs (Find ones with a good fat-meat ratio)
Salt and pepper to season
2 medium onions, peeled and chopped
3 carrots, peeled and chopped
3 celery stalk, chopped
6 cloves garlic, chopped
2 anchovy fillets
2 bay leaves
¼t thyme
¼ cup bourbon (or other whiskey)
2T tomato paste
1½ cups water
1T soy sauce
1/3 cup pomegranate molasses (or regular molasses)
fresh ground pepper

  1. Preheat oven to 150°C. Heat the butter and oil in a large casserole dish over medium heat.
  2. Season the short ribs and brown (about 3 minutes each side) in the casserole. Remove the ribs and set aside.
  3. Add the onion, and cook to translucent.
  4. Add the carrot, celery, garlic and anchovy and sauté for 5 minutes.
  5. Add bay leaves, thyme, bourbon, tomato paste, water, soy sauce and pomegranate molasses. Return ribs, cover, bring to the boil and place in oven on center rack. Cook for ±2 hours or until the meat is soft.
  6. Serve with rice or cuscus.
