Recipes from our Mexican 3 class. Minced beef is combined with onions, tomatoes, raisins and almonds, and used as a filling for tacos or on tostadas.

±1kg lean minced beef (pork can also be used or a combination)
4 T oil
1/2 cup raisins, soaked in water and drained
2 cloves garlic, finely chopped
1 large onion, finely chopped
1 tin tomatoes, chopped
1 large potato, peeled and diced
Salt and pepper to taste

1.   Heat the oil in a large pot add the meat and brown lightly.

2.   Add the garlic and onion, cook until tender.

3.   Add the tomatoes and cook over medium high heat for ±4 minutes, stirring constantly.

4.   Add the potato and raisins, (and a little water if necessary). Season with salt to taste.

5.   Bring to the boil, cover and simmer gently over low heat for 15 minutes or until potato is tender. Stir occasionally and don’t let it dry out too much.

6.   Serve warm or at room temperature.

Serves 6-8
